How to make smoked corn casserole on a Traeger® grill
Step 1 Preheat Your Grill
Make sure your pellet hopper is full before you begin. Set your Traeger® grill to 180 degrees, hit ENTER, then hit IGNITE. Allow the grill to preheat while you prep ingredients.
Step 2 Roast the Corn
Using the disposable veggie grilling tray, roast the corn on your Trager® grill at 180 degrees for ½ hour, depending on how much smoke flavor you like. NOTE: The skillet can also preheat on the grill at the same time.
Step 3 Mix the Ingredients
In a separate bowl, mix the ingredients, including the crema, mayo, cilantro, and lime juice. Mix well, and then add in the Cotija cheese to taste.
Step 4 Add ingredients to the cast iron skillet.
In the preheated cast-iron skillet, add half of the roasted corn. Add the other half of the corn to the ingredients in the bowl until the corn is coated. Add the creamed corn mix over the roasted corn in the skillet. Top with as much of the Quesadilla cheese as you like.
Step 5 Cook the corn casserole
Increase the heat on the Traeger® to 375 degrees. Add the corn on the skillet and let it cook for another 15-20 minutes.
Step 6 Serve
Wear heat-proof gloves and remove the skillet from the Traeger and rest for 10 minutes before serving.
