A winning appetizer or side dish you can make on the Traeger®
We lovingly call these Jalapeño Rockets because the heat from the jalapeño and the andouille will have you soaring with delight! They’re packed full of pimento cheese, andouille sausage, cheese, and some Fire Honey for good measure. Add the wood-fired flavor from your Traeger® and you have a sure-fire hit at your next party.
Ingredients
- 12 ea Jalapenos, Fresh, Medium, Topped and Cored
- 8 oz wt Sausage, Andouille, Cooked, Diced Small
- 8 oz wt Pimento Cheese Dip, Prepared
- ¼ cup Bread Crumbs, Panko
- 1 tbsp Bayou Dust Rub, 5280 Culinary
- 1-2 tbsp Fire Honey, 5280 Culinary
- 6 pieces Bacon, Applewood, Thick, Cut in Half

How to Make Jalapeño Poppers on a Traeger® Pellet Grill
Step 1 Warm up your Traeger® grill
Check your pellet hopper and make sure it is full before you begin. Set your Traeger® grill to 450 degrees, hit ENTER, then hit IGNITE. Allow the grill to preheat while you prep ingredients.
Step 2 Prep the Jalapeño peppers
Top and core all the Jalapeño peppers. Make sure the prep surface is cleaned when you are finished.

Step 3 Mix the filling
In a bowl, mix the cooked andouille sausage, pimento cheese, bread crumbs, Bayou Dust, and Fire Honey. Mix the ingredients well and let them sit for 5 minutes. Then remix them in another 5 minutes.
Step 4 Stuff the Jalapeños
Stuff each jalapeño from the top until full. Then wrap each Jalapeño with a half-slice of bacon and secure with a toothpick.
Step 5 Grill the Jalapeños
Load the Jalapeños into the rack and cook on the Traeger® at 450 degrees. Close the lid and cook for 15 minutes before checking.
Step 6 Check the Jalapeños
Check the Jalapeños and then cook for an additional 5 minutes until done – make sure the bacon is cooked and the cheese is oozing from the top. If the poppers are done, remove them. If not, continue to cook and check in 5-minute increments until they are done.
Step 7 Remove the Jalapeño Poppers
Using heat-proof gloves, remove the rack from the grill. Remove the poppers from the rack and plate them.
Step 8 Serving
Let the poppers rest for 3 minutes before serving. Drizzle with Fire Honey and Bayou Dust to taste. Top with chopped cilantro if desired.
