How to make bacon-wrapped turkey

Step 1 Preheat Grill and Prep Turkey

Preheat your charcoal or pellet grill to 190°F. While the grill is heating up, coat the turkey in olive oil and season to taste in Rub-A-Dub BBQ rub.

PRO TIP
We recommend using a solution-free turkey since it does not come pre-seasoned, allowing you to have control of the flavor.

Step 2 Smoke Your Turkey

Place the turkey on the grill and let it smoke for 1 hour.

Step 3 Prep the Bacon Blanket

Lay 7 pieces of bacon vertically on aluminum foil, then weave 7 more pieces of bacon horizontally in and out of the vertical strips. If you start weaving from the left, weave the second slice of bacon from the right, and so on, until you have 14 slices cross-hatched.

PRO TIP
The bacon should weave all the way across. If not, you can stretch the bacon to fit.

Step 4 Place the Bacon on the Turkey

After 1 hour of cooking, crank the temp up to 350°F. Add the bacon blanket by taking the foil and flipping the weave onto the top of the turkey.

PRO TIP
If you want to save the drippings for gravy, add the turkey to a pan, then cover with the bacon blanket.

Step 5 Finish Cooking the Turkey

Close the lid and let the turkey cook for 2-3 Hours, or until a minimum internal temp of 165˚.

Step 6 Remove from Grill

Take the turkey out of the grill and remove the bacon weave from the turkey. Save the bacon for a snack or other meal.

Step 7 Slice Turkey and Serve

Let the turkey rest for five minutes before slicing, then enjoy a delicious holiday meal with the family!
