How to make smoked candied bacon on a Traeger grill

Step 1 Preheat and Prep

Preheat your Traeger grill to 225°F. For the bacon, use a cooling rack, or if you don’t have one, line a cookie sheet parchment paper.

Set the bacon on the cooling rack, leaving space between each strip for smoke and airflow. Brush each strip with Fire Honey Hot Sauce and season with Tiki Tiki BBQ Rub. Do NOT season the second side.

If your grill is from the Ironwood or Timberline Series, or if you have a Woodridge Pro or Elite, you can use Super Smoke mode to release even more smoke into your cooks. This applies to cooking temperatures between 165° and 225°F.]

Step 2 Cook the Bacon

Place the cooling rack on the grill and cook for one hour (the bacon should start to glaze).

Step 3 Flip and Season

Remove the bacon from the grill, flip each strip, and season with the Tiki Tiki BBQ Rub. Sprinkle brown sugar on the strips.

Step 4 Return to Grill

Cook the bacon for an additional 30 minutes on the grill.

Step 5 Rest, Then Serve

Once done, remove the bacon from the grill and place the cooling rack on a heat-safe cutting board. Let rest 2-3 minutes before removing from the rack and letting cool for several more minutes. Enjoy!
