Ingredients

  • 1 large zucchini, washed and cut into small diagonal slices
  • 1 large yellow squash, washed and cut into small diagonal slices
  • 1 bag of sugar snap peas, washed
  • 1 large crown of broccoli, washed and cut into small florettes
  • Half of a small bag of baby carrots, washed and split in half
  • 1 bag of mini sweet peppers, washed and split in half
  • 2 tbsp of canola/olive oil blend
  • BBQ rub of choice, as needed

How to roast your vegetables on the Traeger

Step 1 Preheat Your Grill

Load your pellets and set your Traeger to 425°F.

Step 2 Season the Veggies

Once you have washed and cut all your veggies, place them into a medium mixing bowl and drizzle with oil. Season to taste with your BBQ rub of choice. Finally, put the veggies in a grilling basket.

Step 3 Start Cooking

Load the grilling basket in the grill. After seven minutes of cooking, toss the veggies with tongs and continue to cook for about eight more minutes.

Step 4 Rest Veggies Before Serving

Let your vegetables rest on a heat-safe surface until cool enough to serve.
